If I'm trying to catch someone who's checking my email, and I embed an image in an email, and they read it, how will I know "who" it is or will it just tell me that someone else read it? If an IP address is provided, could I get a person's name from that?

not with an imbedded image, but a link to an image will work. with an imbedded image, you send the whole package out and no confirmation will ever be received.
with a link to the image there is a possibility, but the other end gets a little complicated. you need to be in control of the server hosting the image. you can then enable full logging and record anyone who visits the web page containing the email and record the ip address and time they visited. with that information you could find who read your email.
